What difference does it make if a sailing boat is filled with foam or not?

My boat has compartment and the berths and cockpit which are filled with what appears to be PUR foam. By what ever reason this foam is all soaking wet. If I take all of the foam out in order to dry the boat, can I leave the boat without this foam or do I have to refoam it as it was before?
