Not too sure about sailing or rocketry terminology.
Aviation:
Airspeed and heading relating to the direction the aircraft is pointing and the speed it is travelling through the air mass. (degrees and knots)
Groundspeed and track relating the direction and speed travelled over ground features (airspeed and heading after taking account of wind drift factors). (again, degrees and knots)
Rate, relating to how fast you’re going up or down. (feet per second positive or negative)
